Bunuelos (boon-WAY-lows) are one of the triumphs of Mexican pastry - crisply fried pastry disks sprinkled with anise seeds, cinnamon, sugar, and honey. Here's a low-fat version using flour tortillas that are baked instead of deep-fried. Best of all, these low-fat bunuelos are ready in minutes.

Makes 4

  • 4 fat-free flour tortillas

  • (8-inch diameter)

  • 1 tablespoon butter or lard, melted

  • 1/4 cup sugar

  • 1 tablespoon ground cinnamon

  • 1 teaspoon anise seeds, crushed

  • 2 tablespoons honey

  1. Preheat the oven to 400F.

  2. Place the tortillas on a large baking sheet. Lightly brush the top side of each tortilla with the butter or lard.

  3. In a small bowl, combine the sugar, cinnamon, and anise seeds. Sprinkle 1 tablespoon of the mixture over each tortilla.

  4. Bake the tortillas for 5 minutes, or until crisp (watch closely so that they don't burn). Transfer to a rack or plate and let cool slightly. Just before serving, drizzle the honey over the tortillas.
