SOUTHWEST GOULASH6 oz. (2 cups) uncooked wagon wheel pasta
1 lb. ground beef
1 (14 1/2 oz.) can Mexican-style stewed tomatoes, undrained
1 (15 oz.) can black beans, drained and rinsed
1 (11 oz.) can whole kernel corn
1 (4 oz.) can chopped green chiles
1/4 cup chopped fresh cilantro
Cook pasta to desired doneness as directed on package. Drain; keep warm.
Meanwhile, in large saucepan, brown ground beef; drain.
Add all remaining ingredients except cilantro to the saucepan. Cook until thoroughly heated.
Gently stir in pasta; sprinkle with cilantro.
Makes 6 servings
