BRAN CASSEROLE BREAD
3 3/4 to 4 1/4 cups unsifted flour 1/3 cup sugar 1 teaspoon salt 2 packages Fleischmann’s Active Dry Yeast 1 cup milk 1/2 cup water 1/3 cup margarine 1 1/2 cups Nabisco 100% Bran Cereal (or Post brand) 1 egg (at room temperature)
Mix 1 1/2 cups flour, sugar, salt and undissolved yeast. Set aside.
Heat milk, water, and margarine until liquids are very warm (120-130 degrees F). Margarine does not need to melt. Gradually add to dry ingredients and beat 2 minutes at medium speed of mixer. Add bran cereal, egg and 1/2 cup flour. Beat at high speed 2 minutes. Stir in enough additional flour to make a thick batter. Spoon into 2 greased 8-inch round pans. Cover; let rise in warm draft-free place 45 minutes.
Bake at 375 degrees F for 25 minutes, or until done. Remove from pans and cool on racks.
