GOLD RUSH CHOCOLATE SPICE CAKE

1 cup Ghirardelli Ground Chocolate
1 1/2 cups unsifted flour
1 cup sugar
1 1/2 tsp. pumpkin pie spice
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter or margarine, softened
1/4 cup milk
1 1/2 tsp. vanilla
2 eggs

Into mixer bowl, sift together Ground Chocolate, flour, sugar, spice, baking powder, salt. Make a well in center; add butter, milk, vanilla. Mix to blend, then beat 5 minutes on high speed of mixer.

Add eggs, one at a time, beating well after each addition. Pour into greased 9 x 5 inch loaf pan lined with waxed paper.

Bake at 350 degrees F for hour or until baked in center. Cool 15 minutes; remove from pan.

Serve plain or frosted. Decorate with walnuts, if desired.

Makes 1 (9x5-inch) loaf, 12-16 servings
