ORZO WITH TOMATOES AND FETA"If you like sun-dried tomatoes, use them when fresh tomatoes are not in season."
1 (1 pound) box orzo pasta
16 yellow or red pear or cherry tomatoes, cut in half
4 ounces feta cheese, crumbled
4 ounces smoked chicken breast (or cooked chicken breast), shredded*
1/3 cup fat-free reduced sodium chicken broth
3 tablespoons finely chopped fresh oregano
3 tablespoons lemon juice
2 tablespoons olive oil
Cook pasta according to package directions; drain.
Combine tomatoes, cheese, chicken, broth, oregano, lemon juice and oil in large bowl; toss to combine.
Stir orzo into chicken mixture; toss to combine. Serve warm or cold.
*Smoked chicken breast is available at gourmet markets that carry specialty deli meats. You can also substitute cooked rotisserie chicken breast or try other smoked meats, such as pork loin.
