Sweet Potato Pancakes

I hope you like this. I invented it last year for Thanksgiving and it was a hit!"

4 pounds yams, scrubbed well

6 eggs

Flour or Matzo Meal

2 bunches whole scallions,
cleaned, and coarsely chopped
(white and green parts)

1 tablespoon grated fresh ginger

Salt and pepper to taste

 

1. Run the yams through the shredder blade of food processor. Drain or squeeze as dry as possible.

2. Add eggs, flour (I don't measure, it has to bind without being dry, maybe 1/4 -1/2 cup). Add scallions, ginger, salt and pepper and blend well.

3. Heat vegetable oil in frying pan to hot. Spoon in sweet potato mixture by heaping spoons, fry till golden on 1 side, flip once and compress.

4. Drain well on paper towels.

May be served immediately, re-warmed in 250 degree oven, or frozen and thawed and rewarmed.
