Hi Pat! This recipe was given to me by my sister in Mississippi. It is very easy to make in the microwave and is very creamy.
Microwave Pralines (see note)
1 small package vanilla pudding (not instant) 1 cup sugar 1/2 cup brown sugar 2/3 cup evaporated milk 2 tbsp butter 1 1/2 cup pecans 1 tsp vanilla flavoring
Mix all ingredients except pecans. Cook on HIGH 7 minutes in microwave. Stir twice during cooking. Take out, add pecans and vanilla flavoring. Beat with spoon 2 to 3 minutes. Spoon onto waxed paper. Cool.
(Cook in 8 cup batter bowl or pyrex bowl for easiest preparation)
Editor's Note: A visitor e-mailed us that they had a problem with the above recipe. Here's an alternate recipe to try:
Microwave Pralines Source: alt.cooking-chat/Jacqueline Davidson
Cook until sugar dissolves: 1 pkg. butterscotch pudding (NOT instant) 1 cup granulated sugar 1/2 cup brown sugar 1/2 cup canned milk 1 Tbsp. butter or marg.
Add 1 and 1/2 cups pecans
Cook and stir to full boil, boil 3-5 minutes, till soft ball stage. Remove from heat, and beat until thick but still shiny. Drop from spoon into little piles, on buttered wax paper.
I have used chocolate pudding and peanuts with good results too. - Jackie
