Here is a couple to try, you can add "Liquid Smoke" during cooking.

DRY RUB B.B.Q.

INGREDIENTS

1/4 Cup Brown Sugar (packed)
2 Tsp Chili Powder.
1 Tsp Paprika.
1/2 Tsp Salt.
1 Tsp Pepper.

Store in an airtight jar at room temperature up to 2 months.


To use: Pre-Heat Oven to 300†
Sprinkle meat with the mix and rub in on both sides.
Place on a rack in roasting pan.
Add: 1 cup water or beer under the rack (for moisture)
Bake at 300† uncovered for 1 1/2 hours.

Add your favorite BBQ sauce, bake and baste until done about 1 1/2 hours more.

TENNESSEE DRY RUB

INGREDIENTS:

2 Tbs Brown Sugar.
2 Tbs Black Pepper (coarse grind).
2 Tbs Paprika.
1 Tbs Chili Powder.
1 tsp White Pepper.
1 tsp Salt.
1 tsp Red Pepper (or to taste).
1 tsp Garlic Powder.


INSTRUCTIONS:

Mix all ingredients together and store in an air tight container or use immediately.

Makes about 2/3 cup - Enough for about 2 racks of ribs.

If for immediate use: Rub B.B.Q. over the entire surface of the meat including the ends.

Sprinkle remainder (if any) on during cooking.
