Well, this being high pomegranite season, I was googling up pomegranite syrup, hoping for something new, and got nowhere except to your posting from 8 years ago! So here's my usual recipe.....

I squeeze the juice out with a citrus press, and measure how many cups of juice there are. Add half that number of cups of sugar, boil and simmer slowly for a few hours (ideally) or boil faster for 15 mins then slowly for another half hour. The bottled syrup would keep forever, but is so delicious it doesn't get the chance. We use it mostly as a concentrate to make drinks.
