A variation on the Limber de Coco, is to use evaporated milk instead of coconut milk, as follows:
One can (12 oz.) evaporated milk One can of cold water One cup of sugar One teaspoon vanilla Dash of salt
Mix well and pour into 5 oz disposable cups.
My mother makes all kinds of limbers (coconut, chocolate, lemon, passion fruit), and they are all wonderful.
