KYJOE'S FAMOUS FRUITCAKE

1 cup flour
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 (14 oz.) can sweetened condensed milk (more, if needed)
1/2 stick (1/4 cup) butter, melted
1 egg, beaten
2 cups seedless dates
2 cups raisins
2 cups pecans
2 cups English walnuts
1 cup black walnuts
1 cup cranberries
1 cup drained pineapple chunks
1 cup maraschino cherries, drained and stemmed

Preheat ovent o 325 degrees F. Coat two loaf pans with nonstick cooking spray.

Mix all ingredients together and fold and mix thoroughly. Use your gloved hands to mix the batter. After adding the condensed milk if mixture needs more moisture add more condensed milk sparingly. The consistency will be very hard pressed and thick with ingredients evenly dispersed through cake. Divide mixture between prepared loaf pans and press into pans.

Bake in preheated 325 degree F oven for 30 minutes. Keep watch as this is an investment and expensively rich cake. Remove from oven and let set 1 hour in pans on rack to let heat escape the bottom of pan.

After cool, turn pan upside down on Pam sprayed aluminum foil and wrap tightly and store three days or four in the fridge.

Slice thinly as this is a very delicate and delicious fare not just for holidays.. After this experience you will enjoy Fruitcake at its finest without alcohol but will cost as much.

This should make two cakes.
