Turtle Cheesecake
3/4 cup grahan crackers 1/2 cup finely chopped pecans 1/4 cup firmly packed brown sugar 1/4 cup melted butter 3 8ounce packages cream cheese, softened 1 14 ounce can sweetened condensed milk 3 eggs
Preheat oven to 300 degrees, Combine crumbs, nuts, sugar and butter; press firmly on bottom of 9 inch spingform pan ot 13x9inch pan. In large mixer bowl, beat cheese until fluffy. Gradully beat in milk unitl smooth. Add eggs and extract; mix well. Pour into prepared pan. Bake 55-60 minutes or until center is set. Cool. Top with topping. Chill Topping: In small pan, combine 1/3 cup firmly packed dark brown sugar and 1/3 cup whipping cream. Cook and stir until sugar dissolves. Simmer 5 minutes or until thickened. Remove from heat; stir in 1/2 cup chopped peacnas. For 13x9 inch pan, double all topping ingredients; simmer 10 -12 minutes ot till thick. Spread over top of cheesecake. May serve with warm caramel sauce if desired. I have not made this but I guess if you wanted a chocolate filling you could use the chocolate condensed milk.
