Here's two of my favorite recipes:
DELISH FISH DISH: This recipe came from a Portuguese family in Gloucester, Mass. The men & woman are all great cooks and come from a long line of fishermen.
1 to 1 1/2 #'s of haddock, cod or your favorite white fish 1 tube of Ritz crackers 1/4 to 1/2 C (to your taste) grated parmesan and/or romano cheese 1/4 small bottle of Catalina salad dressing 1/4 cup red bell pepper 1/4 cup green bell pepper 1/4 cup chopped onions
Put Ritz crackers in a bag and crush w/rolling pin. Saute the veggies in a touch of olive oil. Mix the crackers, Catalina dressing & veggies in a bowl. Arrange the fish in a baking dish or pan. completly cover the fish with cracker/dressing mixture. Bake uncovered at 350 degrees for 30-40 minutes.
The dressing & crackers can be reduced fat if you like.

STEAKS W/HERB BUTTER: From a friend w/ a degree in the culinary arts...
1/4 cup soft butter 2 T chopped green onions 1 T chopped chives 2 T chopped parsley 1/2 t dill week 1/2 t salt 1/4 t tabasco 1 T lemon juice 4 steaks or london broil
Combine butter, green onion, chives, parsley, dill weed & salt. Add tabasco & lemon joice gradually beating until blended.
Cook steaks as desired. Spread steaks with herb butter and serve immediately.
