This is a recipe I used for my son when he was small and could tolerate no milk. It is very simple to make and he loved it.
Coffee Rich Ice Cream
2 c Coffee Rich 2 beaten eggs 1/2 c sugar (white or brown, not powdered) 1/2 c Karo syrup 1 tsp vanilla
blend well. pour into plastic container and freeze till pretty thick, stir well again. freeze.
It doesn't get super hard, and I just put it in a plastic bowl with a lid so I could stir it. It's very simple but he always liked it - so did my husband. I never got to eat it because I'm allergic to corn!
