This went over extremely well at a holiday get-together: The recipe is pretty flexible to what you may have on hand.
Stuffed Cherry Tomatoes
Make your favorite tuna salad, or use: Canned tuna fish, drained Grated white cheese or cream cheese Green pepper, finely cut up Chopped radishes Sliced green onions Grated carrot Pickle relish Chopped hard-boiled egg Mayo A squirt of mustard Small amount of powdered horseradish Basil
The amounts depend on the size of the can of tuna, and how much you can tolerate each vegetable...to taste, in other words. Put all in a bowl and mix.
Cherry tomatoes, stem removed.
With small melon baller, scoop out tomatoes. Set the inner part aside for another recipe. If you need a little more moisture in the tuna salad, add a little of the tomatoes.
Fill tomatoes with tuna salad. Garnish with a sprig of parsley or dill, 1/4 slice of pickle or black olive. Chill.
