I'm not sure I can give exact quantities because I just kind of throw it together.
Tortellini Salad Cook about two pounds of tri color tortellini until just done. I have a cookie sheet in the freezer cold and drain the tortellini and spread on cookie sheet and place in refrigerator to stop cooking. You could rinse with water but it seems to make it stick more.
Cut a handful of each into matchstick size: Roasted red peppers Italian salami or peperoni provel cheese dried tomatoes sweet onion
If I have it I add some Italian cracked green olives(with the pit removed) and the liquid with it.
Dressing 1/2 cup wine vinegar 1 cup olive oil a splash or two balsamic vinegar 1 T sugar(or more to taste) salt and pepper a clove of garlic
