This is always a hit at my house when the summer weather is here and the cooking is outdoors. We love chicken and the best ever recipe I have ever made came from a friend. Well here goes:
The more the merrier...
Using 1 chicken 2 - 3 lbs per 3 persons and stand them all up on the grill!
We have done 6 at a time in 2hours.
Nice thing about this recipe is the simplicity.
Either dry rub or baste your whole chickens.
For each chicken:
1/2 beer still in the can ( the cook can pour the other 1/2 )
Start your grill and heat should be on high.
Instert the beer can with 1/2 of the beer still inside up the chickens largest cavity,,( the bottom ) Your chicken should be sitting at attention. You have already dry rubbed the bird or basted it with your favourite spices ( garlic, cayenne, butter, tarragon)
Initially the heat should be under the chicken. Turn direct heat off when the skin starts to bubble up. Put the lid DOWN. Checking every 15mins or so.... and cook for 1 1/2 to 2 hours. The result is a bird with very crispy skin - meat falling off the bones. ENJOY
