A most wonderful and easy appetizer if you have company, quite elegant but rather quick also: Serves 5-6 as appetizer 20 pieces mussels (opened up, cleaned) (I used the big ones from New Zealand) for preparation there are no detailed amounts, it's so easy you can adjust as you please. Just combine: freshly grated parmesan cheese breadcrumbs finely chopped garlic finely chopped parsley little salt and pepper and just enough olive oil to get a smooth paste
Place mussels on oven proof plate or baking sheet cover each one with prepared paste and bake in preheated oven for about 10 mins. (rather high heat, or grill) Serve immedeately. Enjoy, Regards from Vienna Martina
