this is soft delicious cookie that I am sure you would enjoy and you could substitute whatever fruit mix you like.
NOELS
1 1/4 cup all-purpose flour 1/2 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1/3 cup butter 3/4 cup packed brown sugar 1 egg 1 tsp. vanilla 1/2 cup dairy sour cream 1 (8 oz.) pkg. pitted whole dates, snipped (2cups) 1/2 cup broken walnuts 1 recipe Butter Icing
In a small bowl stir together flour, baking soda, baking powder, and salt; set aside. In a medium bowl beat butter with an electric mixer on medium speed for 30 seconds. Gradually add brown sugar, beating on medium speed till fluffy. Add egg and vanilla; beat till combined.
Alternately add flour mixture and sour cream to egg mixture, beating on low speed just till combined. Stir in dates and walnuts. Drop by well rounded tsp. 2 inches apart onto an ungreased cookie sheet. Bake in a 400 deg. oven for 8-10 min. or until light brown. Cool on a wire rack. When cool, drizzle with Butter Icing. Makes 36 cookies.
BUTTER ICING
In a small bowl stir together 1 cup sifted powdered sugar, 2 Tbsp. melted butter, and 1 tsp. vanilla. Stir in enough milk (2-3 tsp.) to make of drizzling consistency. NOTE: I use 1 cup snipped dried apricots and 1 cup dates in place of 2 cups of all dates.
