I just made this dessert that I recently had at Miss Mary Bobo's Boarding House in Lynchburg, Tennessee. The recipe, and many other wonderful ones are in the Miss Mary Bobo's Boarding House Cookbook. This was my 5th trip there for dinner, and everyone one of them was a wonderful experience!
Delicious Chess Squares
1 cup of butter 1 box of light brown sugar 1/2 cup of sugar 4 eggs 2 cups of all purpose flour 1 tsp baking powder 1 tsp vanilla extract pinch of salt 1 cup of pecans chopped
In a sauce pan, heat brown sugar and butter over low heat. Remove pan from the heat, and add the remaining ingredients. Mix well, and pour into a 13x9-inch greased and floured cake pan.Bake at 300 degrees for 30-40 minutes. Cool, cut into squares, and top with Jack Daniels Caramel Sauce.* (recipe to follow), and whipped cream, if desired. Yield: 8 servings Wonderful!!!!!!!!!!!
Jack Daniel's Caramel Sauce
1 cup of sugar 1/2 cup of buttermilk 1/2 cup of butter 1/2 teaspoon baking soda 1 tablespoon light corn syrup 1/4 cup Jack Daniels Whiskey
In a saucepan combine the sugar, buttermilk and butter.Bring the mixture to a boil, stirring constantly. Boil for several minutes until the sugar is melted, and the mixture has thickened. Remove the pan from the heat and cool slightly. Add the baking soda and corn syrup. Set aside, and cool until serving time. At serving time, stir in the Jack Daniel's Whiskey, and spoon over the chess squares. Yield: 15 Servings.Also good over Chocolate Chess Squares!
Chocolate Chess Squares
1/2 cup of butter 2 squares unsweetened chocolate 1/4 cup of all-purpose flour 2 eggs slightly beaten 1 cup of sugar 1/2 cup of pecans, chopped 1 teaspoon vanilla extract Jack Daniel's Caramel Sauce
In a saucepan combine the butter and chocolate. Melt over low heat and set aside. In a medium bowl, mix the flour, eggs, sugar, nuts and vanilla. Add the egg mixtute to the chocolate mixture. Pour into a well-greased 8 inch square pan. Bake at 350 degrees for 20-25 minutes. Cool. To serve, cut into squares, and top with Jack Daniel's Caramel Sauce and a dollop of whipped cream. Yield: 9 servings. Grrrrreat!!
