Country Cornbread
1 cup white cornmeal 1 cup all-purpose flour 4 tsp. baking powder 1/2 tsp. salt 1 egg 1/4 cup vegetable shortening
Combine cornmeal, flour, baking powder and salt. Add milk, eggs and shortening. Beat until smooth.
Bake in a greased 8 inch iron skillet or square pan in preheated hot oven (450 degrees) for 25 to 30 minutes until golden brown.
