BISQUICK PEACH COBBLER
1/4 cup sugar 3 tablespoons all-purpose flour 1/4 teaspoon ground cinnamon or nutmeg Dash of salt 5 cups frozen (thawed) sliced peaches 2 1/4 cups Bisquick Original baking mix 2/3 cup milk 2 tablespoons margarine or butter 2 tablespoons colored or granulated sugar (for topping) Ice cream, whipped cream, or milk, if desired (for serving)
Heat oven to 400 degrees F. Grease rectangular baking dish, 11x7x1 1/2 inches, or 2-quart shallow casserole.
Mix 1/4 cup sugar, the flour, cinnamon, and salt in 2-quart saucepan. Stir in peaches. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; keep warm.
Mix baking mix and milk until soft dough forms. Pour peach mixture into baking dish. Dot with margarine. Drop dough by tablespoonfuls onto warm peach mixture. Sprinkle with 2 tablespoons sugar.
Bake 15 to 18 minutes or until topping is light brown and peach mixture is bubbly. Serve with ice cream.
