This is a Cucumber Bread recipe Joe Ames posted at his site for another person requsting a recipe for Cucumber Bread:

-- CUCUMBER BREAD 2 c. mashed cucumber 1 tsp. soda 3 eggs 3/4 c. oil 2 tsp. baking powder 1 1/2 c. sugar 1 tsp. lemon extract 1/2 tsp. orange extract 1/4 tsp. vanilla 3/4 tsp. salt 3 c. flour 1/2 tsp. cinnamon 1/4 tsp. ginger
Mix well. Put in 8x4 loaf pan. Bake 350 degrees, 1 hour.

Cucumber Bread
1 PKG yeast 1 CUP water 1/4 TSP ginger 1/4 TSP sugar 2 3/4 CUPS flour 1/2 CUP whole wheat flour 2 TBL wheat germ 1 TBL softened butter 1 TSP salt 1 CUP shelled sunflower seed 1/2 CUP grated cucumber 2 EACH egg yolk 1 TBL oil 4 TBL water Dissolve 1 PKG yeast in 1 CUP water. In a bowl, combine 1/4 TSP ginger, 1/4 TSP sugar, 2-3/4 CUPS flour, 1/2 CUP whole wheat flour, 2 TBL wheat germ, 1 TBL softened butter, 1 TSP salt, 1 CUP sunflower seed (shelled), 1/2 CUP peeled, grated cucumber, 2 egg yolks, 1 TBL oil, and 4 TBL water. Stir in the yeast mixture and knead to form a soft dough. Place in a greased bowl, turning once to coat, cover, and allow to rise until doubled; about 1-1/2 hours. Punch down, form in a greased loaf pan, and allow to rise again; about 1 hour. Bake at 350° for 20 to 25 minutes, or until the top is browned.
