Hi Paula! Here is a recipe taken from the cookbook "Oregon Trail Days - Eddyville, Iowa"- this is a cookbook that I've never found a recipe I didn't like! ZUCCHINI RELISH (by Vicky Osterloh) 10 cups zucchini (peeled & ground) 4 cups onions (ground) 5 Tbs.salt 2 1/4 cups vinegar 2 1/2 cups sugar 1 tsp. nutmeg 1 tsp. dry mustard 1 tsp. tumeric 2 tsp. celery seed 2 Tbsp. cornstarch 1 red pepper (chopped fine) 1 green pepper (chopped fine)
Combine zucchini, onions, and salt. Let stand overnight. Drain, and rinse in cold water; drain again. Combine with remaining ingredients. Cook for 30 minutes after mixture comes to a boil. Pour in hot sterilized jars and seal. Makes 7 pints.
