RAISIN BANANA BREADMake 1 1/2 pound recipe with bread machines that use 3 cups flour, or make 2 pound recipe with bread machines that use 4 cups flour. The same amount of yeast is needed for both the 1 1/2 pound and 2 pound recipes.
FOR A 1 1/2 POUND LOAF:3/4 cup water (plus 2 Tbl)
3 cups Gold Medal Better for Bread flour
1/2 cup mashed very ripe banana
2 tablespoons brown sugar, packed
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
2 teaspoons Fleischmann's bread machine yeast
1/2 cup raisins
Cinnamon Glaze (recipe follows, optional)
FOR A 2 POUND LOAF:1 cup water
4 cups Gold Medal Better for Bread flour
2/3 cup mashed very ripe banana
2 tablespoons brown sugar, packed
2 teaspoons salt
1 teaspoon ground cinnamon
2 teaspoons Fleischmann's bread machine yeast
2/3 cup raisins
Cinnamon Glaze (recipe follows, optional)
Measure carefully, placing all ingredients except raisins and Cinnamon Glaze in bread machine pan in the order recommended by the manufacturer.
Select Sweet or Basic/White cycle. Use Medium or Light crust color. Do not use Delay cycle.
Add raisins at the beep signal or 5 minutes before the last kneading cycle ends. Remove baked bread from pan; cool on wire rack. Drizzle with Cinnamon Glaze.
CINNAMON GLAZE:1/2 cup powdered sugar
1 to 2 teaspoons milk
dash ground cinnamon
Mix all ingredients for the glaze together until smooth and thin enough to drizzle.
Yield: 1 1/2 pound loaf = 12 slices, 2 pound loaf = 16 slices
