1 cup canned diced tomatoes with juice*
1/2 cup carrot juice, made into ice cubes and crushed
1/2 cup soft silken tofu
1/2 cup chopped red bell peppers
1 tablespoon plus 2 teaspoons frozen orange juice concentrate
1 teaspoon grated lemon zest
1/2 teaspoon Lawry's or other seasoned salt
Combine all ingredients in a blender; process until smooth. Serve well chilled.
*If you wish, substitute juicy ripe, fresh tomatoes (peeled) for the canned variety.
Makes 2 servings
