Hi Ron:-) I have to admit that this is kind of a made up recipe after my husband raved, many years ago, about the Super Junior Burrito that he had eaten somewhere in California when he was on a business trip. We like it but it may be nothing like what you are looking for.
R and J's Super Junior Burrito
1 lb. ground chuck 1 pkg. taco seasoning 1 can refried pinto or black beans Shredded iceburg lettuce Chopped fresh tomato Shredded cheddar, jack or pepper-jack cheese Flour tortillas Emma's Encilada Sauce (recipe follows) Pico de Gallo, homemade, or store bought salsa Guacamole, preferrably homemade
Brown and drain the ground chuck. Add the taco seasoning and follow pkg. directions (adding water and simmering until water has evaporated.) Spread each tortilla with some refried beans, then top with some of the taco seasoned ground chuck. Next sprinkle with cheese, lettuce and chopped tomatoes. Roll up the burrito. Top with Emma's Enchilada sauce. Sprinkle with a little more cheese (for pretty). Nuke in the microwave for 45 seconds. Turn halfway and nuke for another 45 seconds. Devour and enjoy with pico de gallo and guacamole:-)!
Emma's Enchilada Sauce - some would call it "gravy." (from my dear friend Emma)
6 Tbl. all-purpose flour 2 - 3 Tbl. chili powder 1 tsp. ground cumin 1 tsp. garlic powder 1 tsp. salt 4 c. water
Mix flour, chili powder, garlic powder, cumin, salt and water in a saucepan. (Put all dry ingredients in the pan and only add a little water - maybe 1/2 c. at first, whisking to remove all lumps, then adding more water and whisking, and finally, all the water). Heat to boiling, then lower heat and cook for at least 10 minutes but longer (25 to 30 minutes) will give you a thicker "gravy." Stir pretty constantly until you lower the heat to a simmer, then stir often.
