Try using the 5 spice firm or extra firm tofu and flash fry it in the wok before you add any other ingredients. I was at the PF Chang in Nashville and met the chef. He told me this was the trick to the vegetarian recipe. Most people add the tofu as part of the overall ingredients. It has to be flash fried first, then cooked with the rest.
