I don't know if you are still looking for the Crash & Burn recipe, but I worked at Copeland's for 10 years. I met my husband there.(He was the manager) ;) I have the actual page from our bartending book they gave us in training. I have several recipes for the speciality drinks, although I have noticed they are not on the current menu.

CRASH AND BURN

In a large metal cocktail shaker mix the following:

1/2 oz light rum
1/2 oz dark rum
1/2 oz Southern Comfort
1/2 oz Blackberry brandy
1/2 oz Banana liquer
1/2 oz Creme de Noya
1/2 oz Triple Sec
3 1/2 oz pineapple jiuce
3 1/2 oz orange juice
2 oz pina colada mix
dash grenadine
dash Rose's lime juice

Shake well to blend. Using strainer, pour into 60 oz speciality glass.

Float the top with Barcardi 151.

Garnish with orange slices, lime and lemon wedges around the rim. Garnish the top of drink with cherries.

I still make these for our "Girl's Bunco Nights". If I have any leftover, I put it in a plastic rubbermaid jug and freeze until next time. Just remember to take it out of the freezer the day before and put it in the refrigerator. Don't use the microwave to defrost it.
