Hi Terri
My husband and I both worked for Copeland's for about 10 years. The Bayou Broccoli balls are very simple to make.
Keep in mind these are all made in large quantities, so I will give you the breakdown and you can decide how much you want to make.

BAYOU BROCCOLI BALLS

2/3 broccoli - very finely chopped
2/3 cheddar and monterey jack cheese - very finely shredded
1/3 bacon - cooked and very finely chopped
breadcrumbs - finely processed

Mix the broccoli, cheese and bacon together. Form into small balls. Place in the freezer until they are firm usually about 30 minutes.

Roll in breadcrumbs.

Fry in lard (Yes, lard) until golden brown. Serve with Tiger sauce.

TIGER SAUCE
Mayonnaise (Blue Plate)
Sugar - white
Horseradish Sauce (the premade kind)
Tabasco (dash)

Mix well and chill.

I don't remember the exact amounts of the mayo, sugar and horseradish. But it is mainly mayo with just enough sugar to sweeten it and just enough horseradish sauce to give it a kick. I do remember the Tabasco was just a dash.
