CAMBERLEY CLUB'S CHEWY CHOCOLATE CHIP COOKIES
"These are the cookies put out for guests at the club-floor rooms at The Brown Hotel. The pastry department shared its recipe."
2 cups flour 1 teaspoon sea salt 1 teaspoon baking soda 1/2 pound (2 sticks) unsalted butter 1/4 cup sugar 1 cup brown sugar, packed 1 egg 1 egg yolk 2 tablespoons milk 1 1/2 teaspoons vanilla 2 cups chocolate chips
Heat oven to 325 degrees F.
Sift together flour, salt and baking soda.
In a bowl, beat the butter until creamy, then beat in both sugars until light. Add the egg, egg yolk, milk and vanilla, and beat until combined.
Fold in the sifted flour mixture until combined into a dough. Fold in the chocolate chips.
Drop by tablespoonfuls onto a cookie sheet, allowing room for spreading.
The Brown makes very large cookies; I used a small ice-cream scoop to portion the dough. If you make them smaller, they may not take as long to bake. The Brown hotel kitchen suggests baking until golden brown, 15 to 25 minutes. Check smaller cookies at 8 minutes.
