APPLESAUCE-BRAN CEREAL MUFFINS
3/4 cup all-purpose flour 2 teaspoons baking powder 1 cup raisin bran cereal 1/2 cup low-fat milk 1/4 cup unsweetened applesauce 1 egg 2 tablespoons vegetable oil
Preheat oven to 400 degrees F. Line muffin pan with paper muffin cups.
Combine flour, baking powder and cereal in mixing bowl. Add milk; let stand 3 minutes.
Stir in applesauce, egg and vegetable oil. Batter will be lumpy. Spoon batter into lined muffin pan, filling each cup 2/3 full.
Bake 15 to 20 minutes, or until golden brown.
