HEARTY HUEVOS RANCHEROS
1 flour tortilla, heated 1/3 cup mild chili con carne, heated thoroughly 1 medium egg, cooked over-easy 1/4 cup finely shredded cheddar cheese 1 tablespoon mild green chilies, chopped
Place warmed tortilla on breakfast plate. Spoon chili on tortilla; spread only to size of cooked egg. Place egg on chili; sprinkle with the cheese and chilies.
