EASY BEEF SHORT RIBS
3 pounds beef short ribs 2 tablespoons dry white wine 2 tablespoons prepared horseradish 1 tablespoon cooking oil 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/4 teaspoon pepper
Place ribs in center of a double-thick rectangle of heavy duty aluminum foil (twice the circumference plus 8 inches). To form packet, bring 2 opposite edges of foil together over top of meat Fold edges over 3 or 4 times, pressing crease in tightly each time. (Allow some air space.) Flatten foil at one end, crease to form triangle and fold edge over several times toward package, pressing tightly to seal. Repeat procedure on other end.
Place packet on grid over low to medium coals and cook 2 hours, turning packets after 1 hour.
Meanwhile combine wine, horseradish, oil, mustard, salt and pepper.
Remove ribs from foil packet. Place ribs on grid and broil 30 minutes, turning and brushing with sauce occasionally.
