i got this recipe out of a mr. food cookbook, the recipe is from a gentleman named steve b. i've made it and sent it out to my hubbies office and got raves back. hope you enjoy.
2 8 oz. packages cream cheese, softened 1/2 c sugar 1 t vanilla 1 c heavy cream 5 snickers candy bars (the large ones) coarsely chopped and divided 1 9" graham cracker crust juice from fresh lemon ( bottled lemon juice will not do)
in large bowl, with electric beater on med., beat cream cheese, sugar and vanilla til smooth. in med. bowl, with electric beater on high speed, beat heavy cream til stiff peaks form. fold whipped cream into the cream cheese mixture til well combined. mix in 4 chopped candy bars. squeeze almost all of the juice from fresh lemon into mixture as this will aid in "setting" the cheesecake, mix. spoon into pie crust and top with remainining chopped candy bar. cover and chill overnight.
my variations: put mixture into chocolate cookie crust, add layer of caramel sauce, spoon in mixture, top with more whipped cream then sprinkle chopped candy bar on top...like the recipe needed to be any higher in fat...
