Hi Shawn: The following recipe is one I use all the time. You can make changes in flavoring or add chips, nuts, berries etc.

4 cups all purpose flour
1/2 cup sugar
4 tsp. baking powder
1 tsp. salt
2 cups milk
2 extra large eggs
1/2 cup oil

Preheat oven to 400deg. Grease or line muffin pans.

Combine flour, sugar, baking powder and salt. Add milk, eggs and oil and beat just enough to moisten the dry ingredients.

Spoon batter into tins (about 2/3 full for each) and bake at 375 deg. for approx. 20 minutes or til tests done. Remove from oven and cool ten minutes - turn out of muffin tin. makes 24 muffins.

VARIATIONS:

I cut the recipe in half. I add 3/4 cup mini chips and 1/2 tsp. almond extract. I bake in texas size muffin cups (makes 6) at 400 deg for 20-25 min.

ALSO: Top w/cinnamon sugar. Top with streusel or crumbs. Add 1 cup blueberries sprinkled with 2 tbsp. flour to basic batter, plus 1/3 cup more sugar and bake as above.

I have also done the following: with 1/2 of the recipe, add 2/3 cup maple syrup and 1/3 cup milk instead of the milk.
