Dear Mike,

I have added gluten a couple of times and the bread turn our ok. But once I added half the amount of gluten to whole-wheat flour and the bread was way to chewy. We could not chew the pieces into smaller pieces with our teeth. Finally we decided to feed the loaf to the birds. Even they did not want the gluten loaf once the first tried a piece. Finally I got so mad and jumped on top of the loaf. Wouldn't you know it…the loaf of bread rose to its original height.(smile)

Well learned my lesson, don't add to much gluten when baking bread.

Try adding 1/4 Cup of gluten to your recipe and subtract 1/4 Cup of flour original your recipe. This seem to be a good mix for me when I bake in the oven.
