Morning all, Had a house ful this weekend,when visiters come I usually make muffins,these I made on Saturday. GINGER and WALNUT MUFFINS *************************** 1 cup whole wheat flour 1 cup plain flour 1/2 cup soft brown sugar 1 tsp baking powder 2 eggs 1/2 cup oil( sunflower is fine) 1 cup yogurt or buttermilk 1/2 cup chopped walnuts 6 peices crystallized ginger chopped
Combine eggs,sugar,oil and yogurt.add flours,baking powder,nuts and ginger.Mix til just combined(don,t beat).Spoon into greased muffin tins and bake in a pre- heated oven at 200c(4oof)for 20 mins. Makes about 10 enjoy Julie
