Apple Streusel Muffins This came from a muffin book many moons ago. Sorry don't recall the name of the book.
Makes about 18
Topping: 1/2 c chopped walnuts 1/4 c flour 3T sugar 2 T butter, room temperature 1/4 t cinnamon
Batter: 1 1/2 c all-purpose flour 1/2 c sugar 2 t baking powder 1 t cinnamon 1/4 each allspice, baking soda and salt 2 large eggs 1 cup sour cream 1/4 c (1/2 stick) butter, melted 1 cup diced unpeeled apple, preferably a tart apple like Granny Smith or Bramley
Heat oven to 375 F. Grease muffin cups/tins.
Make streusel topping: Mix with a fork and then crumble with fingers until it looks like chopped walnuts. set aside
Make batter: Mix flour, sugar, baking powder,cinnamon, allspice, baking soda, and salt in a large bowl.
Pre-beat eggs in a separate bowl. Add sour cream & butter to eggs. Whisk to blend. Stir in diced apple. Add to the flour mixture and fold in just until dry ingredients are moistened.
Scoop batter into tins. Top each muffin with about 2 t of the streusel topping.
Bake 20-25 minutes, or until browned. Test with a toothpick. Remove from pans & let cool.
