Crispy Polynesian Butterscotch Cookies From the book of "best-loved cookies Nestle Toll House"
Ingredients 1 1/2 cups all-purpose flour 1/2 tsp baking soda 1/2 tsp salt 1/2 cup butter or margarine, softened 1/2 cup vegetable oil 1/2 cup granulated sugar (I skipped that because I don't like sweet cookies) 1/2 cup packed brown sugar 1 egg 1 tsp vanilla extract (I substituted with grated orange peel) 2 cups (12-ounce package) NESTLE toll house Butterscotch Flavored Morsels 1/2 cup quick oats 1/2 cup crushed cereal flakes ( I crushed them with my hands) 1/2 cup flaked coconut 1/2 cup chopped nuts
Combine flour, baking soda and salt in small bowl. Beat butter, oil, granulated sugar, brown sugar, egg and vanilla in large mixer bowl until creamy. Gradually beat in flour mixture. Stir in morsels, oats, crushed cereal, coconut and nuts. Drop by rounded tablespoon onto greases baking sheets.
Bake in preheated 350 F oven for 10 to 14 minutes or until edges are crisp but centers are still slightly soft. Let stand for 2 minutes; remove to wire racks to cool. Makes 31/2 dozen cookies.
*My note: It is difficult to shape the mixture in a tablespoon because it is very crumbly and oily. It cannot hold together easily. You have to press each tablespoon of mixture very hard between the palms of your hand. It is better to put the mixture in the refrigerator for one hour before handling it. However, the cookies are very delicious and crispy.
