BANANA SOFTIES
2/3 cup soft shortening 1 cup firmly packed brown sugar 1 egg 1 teaspoon vanilla 3/4 cup mashed banana 1 3/4 cups sifted all-purpose flour 1 teaspoon baking powder 3/4 teaspoon salt 1/4 teaspoon baking soda 1/4 cup milk 1/2 cup chopped walnuts 1 cup Quaker Oats (quick or old fashioned, uncooked)
Beat shortening and sugar together until creamy. Add egg, vanilla and banana; beat well; set aside.
Sift together flour, baking powder, salt and baking soda. Add to creamed mixture alternately with milk, mixing well after each addition. Stir in walnuts and oats. Drop by teaspoonfuls onto greased cookie sheets.
Bake in preheated moderate oven (350 degrees F) 12 to 15 minutes.
