I was just about to peel and put two very ripe bananas into the freezer for baking something later, and then I thought...oh, what the heck!

here's what I came up with:

BANANA MUFFINS
(makes 12, but I use a round silicone baking pan, like a little bundt pan thingy)

2 Large bananas, ripe, mashed, left to soak in 1/2 cup strong coffee (leave aside while the wet & dry mixtures are being prepared)
1/2 cup brown sugar
1 beaten egg
1/3 cup canola oil
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white flour
1/2 cup oatmeal, uncooked
1/2 cup whole wheat flour
2 TBSP flax meal
handful each of toasted chopped walnuts and chocolate chips

Prepare mashed banana mixture, set aside, and prepare sugar, egg and oil mixture. Set aside.

In a separate bowl, mix together baking soda, baking powder, salt, flours, oatmeal, and flax meal.

Mix wet and dry ingredients all together, being careful not to over-mix. Fold in walnuts and chocolate chips.

Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes or so, until they test done.
