VIDA'S CHAMPION APRICOT-PECAN BREAD
(County Fair Winner)

2 cups flour
1 1/4 cup white granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 egg
2 tablespoons cooking oil
3/4 cup apricot nectar
2 cups chopped fresh apricots
1/2 to 3/4 cup chopped pecans

Sift together all dry ingredients into large bowl.

In a small bowl, whisk together egg, oil and nectar. Pour wet mixture over dry mixture and fold together until all is moist. Fold in apricots and pecans. Pour into greased and floured 9-by-5-inch loaf pan.

Bake at 350 degrees F for 1 hour or until a toothpick inserted in center comes out clean. Cool completely before slicing.

Makes 1 loaf
