DORIS LASKA'S CHOCOLATE CHIFFON CAKE (County Fair Winner)
2/3 cup plus 1 1/2 teaspoons unsweetened cocoa powder 3/4 cup hot water 1 1/2 cups cake flour 1 3/4 cups white granulated sugar 1 teaspoon baking soda 1 teaspoon salt 1/2 cup vegetable oil 7 eggs, separated 1 teaspoon vanilla 1/2 teaspoon cream of tartar 1/2 cup powdered or white sugar (for dusting top)
In a small bowl, stir 2/3 cup cocoa powder and 3/4 cup hot water until smooth and cool.
In a large bowl, combine flour, sugar, baking soda and salt. Add oil, egg yolks, vanilla and cocoa mixture; stir until smooth; set aside.
In mixing bowl, beat egg whites until foamy. Add cream of tartar, beat until stiff peaks form. Gradually fold in yolk mixture. Pour into ungreased 10-inch tube pan.
Bake on lowest oven rack at 350 degrees F for 60 to 65 minutes. Invert pan and cool.
Combine 1/2 cup powdered or white sugar and the remaining 1 1/2 teaspoons cocoa powder. Remove cooled cake from pan and dust with sugar-cocoa mixture.
