IMPOSSIBLY EASY BANANA CUSTARD PIE
2 cups mashed bananas (about 4 medium) 1 tablespoon lemon juice 1/2 cup sugar 1/2 cup Bisquick baking mix 2 tablespoons margarine or butter 1 teaspoon vanilla 2 eggs 1 (14 ounce) can sweetened condensed milk 1 1/2 cups whipped topping 1/2 cup coarsely chopped walnuts Heat oven to 350 degrees F. Grease pie plate, 10x1 1/2 inches.
Mix bananas and lemon juice; reserve.
Beat remaining ingredients except whipped topping and walnuts in large bowl on medium speed until smooth, about 1 1/2 minutes. Add banana mixture; beat on high speed until smooth, about 2 minutes. Pour into plate.
Bake until golden brown and knife inserted in center comes out clean, 50 to 55 minutes; cool. Refrigerate until chilled.
Spread top with whipped topping; sprinkle with walnuts.
High Altitude Directions (3500 to 6500 feet): Decrease sugar to 1/3 cup.

BANANA CREAM CHEESE PIE
FOR THE CRUST: 1 1/2 cup vanilla wafer crumbs 1/4 cup sugar 6 tablespoons butter, melted
FOR THE FILLING: 2 packages (8 ounces each) cream cheese, softened 1 cup sugar 3 eggs 1/2 cup mashed bananas Sliced banana (for top)*
Combine crust ingredients and pat into a pie plate.
Beat the softened cream cheese with an electric mixer until light and fluffy. Gradually add the sugar, mixing well after each addition. Add the eggs one at a time, beating after each. Stir in the mashed bananas. Pour filling into pie shell and place sliced banana on top.
Bake for 50 minutes in a preheated 350 degree F oven. Cool on a wire rack. Refrigerate until ready to serve.
*To keep the sliced bananas from turning brown, brush lightly with lemon juice.

FROZEN BANANA WALNUT TOFFEE PIE
"This decadent dessert is real crowd pleaser that combines bananas, toffee chips, walnuts and vanilla ice cream. Serve it at your next family celebration. Birthday pie, anyone?"
4 cups vanilla ice cream, softened 2 cups mashed ripe bananas (about 3) 1 cup California walnuts chopped, toasted 1 cup toffee bits 1 frozen prepared pie shell, baked 1 cup 35% whipping cream 1 banana 12 California walnut halves, toasted
In a large bowl, using a wooden spoon, quickly stir together ice cream, mashed bananas, California Walnuts and toffee bits until smooth. Spread evenly into baked pie crust and freeze immediately until solid, about 4 hours and up to 2 days.
TO SERVE: In a bowl, whip cream until it is light and fluffy. Cut banana into 12 slices. Spread whipped cream evenly over frozen pie. Top with walnut halves and banana slices.
