Hi Tomm,
Here in Germany we have a dessert called Apfelkompottthat might be what you are looking for. Here is how I make it:

2 1/2 pounds of apples, peeled,cored and cut into 3/4 inch wedges
1/2 pint of water or apple juice
2 to 4 tbsp sugar
a strip of lemon peel, about 2 inches
a cinnamon stick, 1 inch long OR
2 cloves (whatever you like better)

Heat the water with spices, add the apples, let cook over very low heat for about 5-10 minutes, until the apples are just tender. Remove the spices and fill in a bowl to cool. Taste with sugar. serve cool or slightly warm.
For a variation you can add a tbsp of raisins to the still hot apples.

If you cooked the apples 10 minutes longer, you could put them in a blender or pass them through a sieve and you would have a very good apple sauce.
