SCOOPSICLES"The original Good Humor Creamsicle was a splendid pop coated in orange sherbet. Talk about refreshing! You can make a reasonable facsimile with two sets of ice cream pop molds."
1 pint vanilla ice cream
1 pint orange sherbet
First, fill smaller molds with the ice cream and freeze. Then put the frozen ice creams into larger molds and fill with orange sherbet. This is great for mass-producing 50 or 60 pops.
If you want to make just a few, a more practical method goes like this:Freeze the sherbet in a 2-inch deep pan. A cake pan will do fine.
Scoop a small ball of the vanilla ice cream. Place it on top of the frozen sherbet and while scooping roll the ball to cover with the sherbet. The sherbet will wrap around the vanilla as you scoop.
Serve as is, or impale it on an ice cream stick and freeze until hardened.
Make as many of these scoopsicles as you want. Put the rest of the ice cream and sherbet back in the freezer for another time.
Makes 8 servings of 4-oz. each from 1 pint of ice cream plus 1 pint of sherbet
