CHERRY BAVARIAN CREAM1 tablespoon (unflavored) gelatlne
1/4 cup cold water
2 cups canned sour pitted cherries, undrained
1/2 to 2/3 cup sugar
1 tablespoon lemon juice
1/4 teaspoon salt
1 cup heavy (whipping) cream, whipped
Garnishes: whipped cream and whole red cherries
Soak the gelatine in the 1/4 cup cold water. Liquefy the softened gelatine over hot water, add some of the cherry juice and stir into the cherries and juice. Add sugar, lemon juice and salt and stir until dissolved. Chill the mixture and when beginning to thicken fold in the whipped cream.
Rinse large mold in cold water and fill with the cream mixture. Set in a cold place (refrigerate).
To serve, unmold no a large plate and garnish with whipped cream and whole red cherries.
Makes 6 servings
