CELERY MEATLOAF

1 cup soft bread crumbs
2/3 cup milk
2 tablespoons butter or margarine
1/4 cup chopped fresh onion
1 cup finely chopped celery
1 1/2 pounds ground beef
1 egg, beaten
2 tablespoons chopped celery leaves
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce
1 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon dried leaf thyme

Soak bread crumbs in milk in large bowl; set aside.

Melt butter in large skillet; add celery and onion; cook until tender. Add to bread crumbs. Add remaining ingredients and mix well. Pack in an 8 x 4 x 2 3/4-inch loaf pan.

Bake in a 350 degrees F oven 1 hour. Let stand 5 to 10 minutes. Turn out onto platter.

Makes 6 servings
