INSTANT PANCAKE MIX6 cups all-purpose flour
1 1/2 teaspoons baking soda
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar
Combine all of the mix ingredients in a lidded container. Shake to mix. Use the mix within 3 months.
TO MAKE PANCAKES:Whisk together two egg whites and 2 cups buttermilk.
In another bowl, whisk 2 egg yolks with 4 tablespoons melted butter. Combine buttermilk mixture with egg yolk mixture; whisk thoroughly. Pour liquid ingredients on top of 2 cups pancake mix; whisk to bring together.
Cook in a greased skillet or on a griddle.
Makes enough for 3 batches pancakes
